There are three ways to prepare gelatin:
1. Alkali method: After fully soaking the animal bones and skins with lime emulsion, neutralize them with hydrochloric acid, wash them with water, and store them at 60℃~70 It is obtained by boiling glue at ℃ and then undergoing antiseptic, bleaching, freezing, slicing and drying. The finished product is called “type B gelatin” or “alkaline gelatin”.
2. Acid method: The raw materials are acidified in cold sulfuric acid solution with a pH value of 1 to 3 for 2 to 8 hours, rinsed and soaked in water for 24 hours, boiled at 50°C to 70°C for 4 to 8 hours, and then gelled, extruded, and dried. become. The finished product is called “Type A gelatin” or “acid-process gelatin”.
3. Enzymatic method: enzymatically hydrolyze the raw material skin with protease, then treat it with lime for 24 hours, and then neutralize, gelatinize, concentrate, freeze, and dry.
